    Roselle is soured with our house lactobacillus strain and infused with hibiscus flowers, which lends the beer floral and citrus aromas and flavors and its red hue. Tart, fruity, and floral. - Brewer For a typical beer the color spectrum follows SRM- a scale which varies from light straw to jet black with varying shades of gold, amber, and copper in between. However when you crack open Roselle and pour it into glass its vibrant dark pink color defies the SRM scale developed over 60 years ago. Based on the color you might jump to the conclusion that it is flavored with strawberry, cherry or possibly raspberry. Instead Fair State uses hibiscus flowers to provide this sour with its brilliant pink color. The hibiscus contributes strong floral notes which pair with the sharp tartness to give a sharp citrus like flavor. The sourness dominates the flavor and provides a puckering sensation to play on your other senses.

    96 Points on RateBeer Dry, pale, and aroma-forward American IPA brewed with wheat malt and Horizon, Chinook, Crystal, Cascade, Simcoe, and Centennial hops. IPA brewed w/malted wheat and six varieties of hops - Brewer IPAs brewed with wheat have unique characteristics which classic barley dominated IPAs lack. Too often adding wheat is a head and body game, the extra protein in wheat malt creates a fuller almost fluffy body and the head gets an extra boost of sustaining foam. But wheat also impacts the flavor of beer as well, of course. Wheat contributes a sweetness factor very different from what you would expect from your kilned and caramel malts. The sweetness is lighter and more subtle, noticeable in this IPA. The fruity hoppiness combines with the sweetness of the wheat malt to create a spectacular slightly toasted wheat bread and apricot jam illusion. Of course the beer is still an IPA so there is apparent bitterness in the forefront and after taste, but unlike other IPAs the bitterness is well rounded and does not deter from the unique flavor profile. - Cicerone

    Brewed exclusively with El Dorado hops, this dry-hopped IPA is fermented with a combination of Saccharomyces Trois and Brettanomyces. Fruity, funky, and hoppy. - Brewer Brettanomyces is a bacteria reminiscent of goats, it is known to eat everything (interestingly? is also a flavor commonly attributed to Brett beers). As a result of Bretts' ability to consume any sugars, it leaves behind a unique set of molecules which leaves a beer tasting some what barn yard like? and very dry. The characteristics of Brett are in the forefront of Dorado Gold. The aroma is hay-like and almost musty; like opening the door to a barn in the Fall. The flavor is similar to the aroma but more intense and funky.
